Mum's Coffee Cake
(Use the 9 X 13"  pan.)
 

Ingredients:

1 1/2 C Flour

3/4 C Sugar

6 tsp. Baking Powder

1 Pinches of Salt

1/4 C Margarine or Butter


Cut until you have a cornmeal appearance, then Add: 

3/4 C Milk

1 Eggs

1tsp. Vanilla


  I like this cake best when served warm with Vanilla Ice Cream or Whipped Cream.
 

Instructions:

Pour this batter into a greased and floured jelly roll pan making sure to use the larg pan as stated above, or something comparable.



For Coffee Cake...Mix and crumble the following ingredients over the batter (in a clumpy fashion):

1/2 C Brown Sugar

1 1/2 T Cinnamon

2 tsp. Melted Margarine


Bake @ 350o until golden brown and the cake snaps back when you test the middle.

There are several variations you can use with this cake.  Here are just a few...

Bake it with out the topping, poke holes in the top when it is still warm and pour jello over it.  Refrigarate, spread with vanilla pudding, then with cool whip.

Bake it without the topping and serve it with strawberries and whipped topping...and or ice cream,


Luaine's (3x) Coffee Cake
(Use the 17&1/2 X 11" jelly roll pan - This is Luaine's amended version.)
 

Ingredients:

4 1/2 C Flour

2 1/4 C Sugar

6 tsp. Baking Powder

3 Pinches of Salt

3/4 C Margarine or Butter
